Vinification & Ageing
Gently conveyed from custom-made fermentation vats to French oak barrels, the wine undergoes a precision vinification process that is almost entirely hands-off in its approach. Under the demanding, watchful eyes of the cellar team, the wine is vinified with the ultimate aim of bringing out the truest expression of the Kirwan terroir. Each tiny technical detail has been carefully studied to meet the exact requirements of this insatiable quest. Each task is perfected in order to accompany, coax out and release as gently as possible the individual expression of each vintage. Patience and savoir-faire are the essential ingredients in bringing about this metamorphosis.
